Summer = bring out the crock pot?

Just yesterday I posted my kick-off-to-summer Tropical Smoothie - and today, crock pot oats? What can I say? I still love a warm bowl of chia-flax-oats. Especially with the addition of another new (all natural) extract!

Last night, into the pot went:



2 c rolled oats
5 T chia seeds
2 T flax seeds
3 c unsweetened vanilla almond milk
3 c water
1 t maple extract
1/2 t cinnamon
1/8 t almond extract
stevia, 5 servings


(5-6 servings) 


I mixed in 1/2 serving vanilla protein and topped with shaved (they are called shaved, right?) almonds...


(Hit the spot)

Tip: If you're oats come out too think, simply whisk in more milk/water. Place pot in refrigerator to store. I usually end up whisking additional liquid after completely cooling.

My lunch preference however, was more summer-ish in nature. Perhaps it's the insanely hot & humid DC heat? I eat a lot of salads in the summer...


Spiralized zucchini
tomatoes
cucumbers
diced (firm) tofu
chickpeas
sunflower seeds
Spicy peanut vinaigrette (Trader Joe's brand)

(For those that have asked, I bought my spiralizer (Joyce Chen brand) off Amazon for about $23. So worth it - I use it all the time!

  5. I love oatmeal anytime! I think I also crave more summer foods in the winter than I do winter foods in the summer :)

  7. In England we call them "slivered" almonds, not shaved :-) I don't really eat differently season by season...I eat the same year round. Just came across your blog and love it! Have a beautiful day! :-) xyx

  9. I love your website and I am so grateful that I found it :) Thank you for everything. I am new to the whole foods/healthy food...
    I have few questions regarding some ingredients:
    Tofu- which brand do you use and do you cook it? (didn't know you could eat tofu raw). I always cooked mine :)
    Chia seeds- where do you buy your seeds. What does it taste like? I am afraid to buy it and then end up not eating it at all.
    Stevia- where do you buy your stevia... I found single packaged powder version of it at the whole foods and I returned it because didn't like the flavor.

    I don't have a tofu brand but I generally choose a firm kind and organic if it's available. Do you have a Trader Joe's near you? I like the one in pink/purple packaging.

    I have bought my chia seeds online and in the store. Most recently I bought them from Whole Foods (in the baking section). Let me know if you need help finding them online and I can send you some links. They don't really have a taste only add some texture.

    I buy my stevia from Trader Joe's (not the powdered one, but the granular kind; you can see a pic of it in this post) or I like Truvia (available in most grocery stores). I recently bought Stevia in the Raw but haven't tried it yet.

  11. I eat a ton of salads in the summer too! They always manage to cool me right off! But I do sometimes reverse things, and have soup in the summer too haha!
