In an effort to kick it in the butt asap, I've been drinking tons of water and eating very nutrient dense foods. Here's a recent bfast that's both healthy and delicious.
Chocolate-covered Strawberry Oatmeal & FroYo Parfait (protein-packed!)
I loved this combo! Recipe here, just substitute chocolate protein instead of vanilla and omit the vanilla extract.
On the hydration front, I've consumed about 10L (in the last 2 days, not kidding) of this stuff. It seems to work for Jennifer Aniston....
I kid, I kid. But I do like the stuff.
Chocolate protein cupcakes
Combine, mix and microwave for 1 min, 30 seconds
1.5 scoops chocolate (SunWarrior) protein
1 T egg whites
pinch baking powder
stevia, 1 serving
sea salt, teeeny pinch
water, to moisten. <--If your cake is too dry, add more h20!
1 T *almond butter (topping)
*Since I broke up with Mr. Cow, I've replaced my cupcake toppings with nut butters or coconut milk yogurt. Deeeeelish.

I think Seth felt a little bad for me and took charge of dinner tonight and he came up with quite the amazing stir-fry combo!
Chicken, quinoa & veggie stir-fry
Serves 5: Cook 1 c Quinoa in low-sodium chicken broth and set aside when done. Chop 3 peppers, 1 medium yellow onion, mushrooms, garlic and cook over medium heat until onions start to brown. Next, add diced chicken breast and 3 eggs and cook thoroughly. Finally, mix all ingredients and added Liquid Aminos (or soy sauce), sea salt, and black pepper, to taste. <--So good! Do you suffer from food allergies? If so, what's the hardest thing you've had to give up? (Greek yogurt for me!)
Are you a stir-fry person? I'm usually not but I LOVED the version Seth made!






Hope you're feeling better asap. I don't think I have any food allergies but milk for the hubby. He's moved on to soy and not having any issues, yeah!

ReplyDeleteI don't eat very much dairy, but occasionally I'll have Greek yogurt or ice cream! Luckily I have a stomach of steel, though- no allergies or anything. The only thing that messes with me is eating too much, haha!

Whoaaaaa, I want everything in this post. Everything. But especially the cupcake. And the quinoa, I always love quinoa. Sounds like a fun and interesting way to make it, with an Asian flair.

I have a gluten intolerance, and the hardest thing I've had to give up is pizza, hands down. A crispy, thin crust will always hold a special place in my heart. I'm hopeful that somebody out there will invent a *good* GF alternative very soon!

I hope you feel better soon! The food looks delicious, so I'm sure it'll nurse you back to health soon! I've long battled stomach problems/sensitivities and I have leaky guy syndrome, but my doctors have been unable to determine exactly what the original cause of it is. Meh. :( It's hard because even the strictest diets haven't helped me, so I'm back to eating most things in moderation. Like my doctor says--you can't be allergic to EVERYTHING. Honestly, if I knew that giving up something would help my stomach, I would have no problem giving it up...because I would finally know what to do. Wow, that sounds depressing. I'm really not that depressing, HAH! :)

I got ill recently....It sucks!
ReplyDeleteBeing a vegetarian, I find it hard to get enough protein. I could eat beans until I exploded, but this does not make me a good person to be around ;) It's so easy to slip into eating veggies and carbs and not enough of the muscle building stuff. Do you have any tips for slipping in extra protein, especially as you avoid certain animal products?

ReplyDelete@Becki I get a lot of protein though beans, nutritional yeast, protein powder (SunWarrior brand; it's raw/vegan/all natural), nutritional yeast, nuts, nut butters, Greek yogurt (before I gave up dairy) and eggs. I do eat meat, but very rarely so those are my usual sources :)
