Peace out, cow.

I've talked about my stomach issues involving dairy and my inability to cut it out of my life. Well kids, it's been 3 weeks since I've had any dairy! And I feel a-m-a-z-i-n-g. No more bloating, sharp pains, and feeling like my intestines are swelling out of my pants. I think the trick for me was to get the temptation out of the kitchen. If I see Greek yogurt or Laughing Cow cheese...I will eat you.

Two big savors have been Coconut Milk yogurt (the stuff is insanely delicious) and Daiya dairy-free (rice milk) shredded cheese. It's made from all natural ingredients and when melted tastes just like real cheese.

Craving an ooey gooey cheesy pasta, I made a healthified protein-packed sauce topped over zucchini "pasta".

*Vegan option: Use meat-free crumbles (Quorn or other) instead


Ingredients:
1 pack lean ground turkey breast
1 jar pasta sauce
1 medium yellow onion, chopped
2 cloves garlic, finely diced
1 c diced or canned tomatoes
1 c frozen spinach
1 c Dayia vegan shredded cheese (or other shredded cheese) 
1/2 t sea salt (or to taste)
black pepper, to taste
1 T olive oil
1 t basil
1 t oregano
pinch cayenne pepper

Directions:
Over medium heat, add olive oil, garlic, and onions to frying pan. Cook until onions are browned.
Add turkey and brown outside.
Transfer to larger pan and add remaining ingredients except cheese.
Cook covered for ~15 mins over low/medium heat.
Add cheese and stir until cheese is melted.
Served over sprialized zucchini or other pasta variety.

Tip: To keep noodles in tact and prevent mushiness, spiralize raw zucchini and briefly warm in microwave before serving.

So cheesy you wouldn't believe this is actually good great for you.


It was a great meal to end a lovely day off. I spend it running...

    I have spiralized some zucchini noodles. For me it's all about the sauce and "cheese" :)

  2. Mmmm looks delicious! Daiya cheese is awesome, isn't it? I'm not vegan, but I tend to avoid (cow's milk) dairy, so I eat daiya from time to time. And that trail looks gorgeous! DC is fabulous. :)

  4. This may be a silly question, but how do you spiralize the zucchini?

    I gave up meat (for the most part) a few months ago and feel awesome!

  7. I've cut out most red meat, and it's really helping my stomach problems!! Congrats on giving up dairy! That's a huge accomplishment!

  8. Oh my gosh, this sauce looks so good and so RICH! Congrats on cutting out dairy...my dairy weaknesses are cheese and yogurt, so I completely understand how hard it must be!!

  10. @Becky It's the Capital Crescent trail. I pick it up from under the Key Bridge (DC side) and run along the water (heading N towards MD)

  11. I have been eating less dairy and I feel good! I used to eat yogurt every day but stopped 5 months ago, but I still eat fro yo or LC cheese!

    Can not wait to see u!

  12. That recipe looks really good!

    I also limit dairy and wheat. I find that I feel my best when those are kept minimal. The wheat limitation is mostly because I can and will demolish entire loaves of crusty bread if they are left around for me!

  15. That looks awesome! Sorry to hear about your dairy troubles :-/ But luckily we live in a day and age with loads of alternatives. How do you think spiralized zucchini compares to spaghetti squash?

  16. I'm actually thinking that dairy may be the cause of my bloating woes as well. I've cut back but haven't yet eliminated it, but I think I feel better already. I just need to get my husband to stop making things with cheese for dinner!
