And the thing is, it was incredibly easy and not just a save-it-for-Sunday-brunch-when-I-have-more-time recipe. Make this on a Tuesday. (Recipe lightly adapted from OhSheGlows.com)
The players
1/4 cup oats
1 T chia seeds
1/2 t flax seeds
1/2 scoop vanilla protein powder
1/3 cup non-dairy milk (I used almond), 1/3 cup H20
1/2 t vanilla extract (choose an all-natural version)
1 banana, broken into chunks and frozen
Fruit of choice (I used strawberries)
pinch cinnamon
sweetener of choice (optional; 1 serving; I used stevia)
fancy schmancy martini glass, optional
The night before, combine all ingredients except the fruit.
Mix and chill in fridge over night.
(The oats/seeds will soak up most of the liquid)
The next morning, (in a food processor) combine 1 frozen banana (broken up into chunks) and a teeeeny (~1-2T) bit of non-dairy milk. Blend and you have Banana Frozen Yogurt!
Now the fun part, Layer Baby Layer!
And devour!
I might have this again for lunch.....aaaand dinner.
