Productive procrastination

Thanks for your comments and advice on yesterday's post about the dangers of being overweight. It's a sensitive issue for many people. But if words could change or save a life, I have a hard time believing that bringing it up isn't worth it. (*Click here to watch an experiment I did where you literally see what excessive amounts of fat looks like in your bloodstream*)

To be completely honest, yesterday I was feeling quite blah. Every now and then I have an off day. Fortunately they're few and far between, but still leave me feeling like poo (yes, I said poo). I had the day off from work and planned to check off 348,924 things on my to-do list. Problem was, my "to-do" list morphed into a "how can I sit/lay/sleep/eat on the couch for as long as possible list". I wanted nothing to do with the frigid outside weather (which ironically wasn't that cold at all). I literally laid on the couch, watching TV, surfing online from 10am until 4pm until I finally got up....because I was hungry.

Tuna salad over a bed of fresh spinach
1 can chunk light tuna
fat-free Greek yogurt
diced Kosher dill pickles
Teeeny splash pickle juice (for flavah)
1 t dill
pinch celery seed (aaaahmazing new addition!)
sea salt, black pepper

To procrastinate further, I prepped lunches for the next 3 days. It seriously took 5 seconds, but what a time saver!

Magic soup on the fly!
(per lunch)
diced firm tofu (1/5 package)
1/2 cup frozen spinach
hand full frozen veggies (whatever you have on hand)
1/4 cup kidney beans
1/2 t chili powder
pinch cumin
pinch cayenne pepper
pinch sea salt

And fuuuuuurther procrastinated by making the next day's breakfast.....

Spiced Pumpkin Maple-Walnut yogurt
3/4 cup fat-free Greek yogurt
1/3 cup pumpkin (canned, organic)
1/2 scoop vanilla SunWarrior protein
1 T crushed walnuts
1 t maple syrup
stevia (1-2 servings)
teeeeeny pinch sea salt

(Protein packed and delicious. Love having breakfast 100% prepped night before.)

At aprox. 6pm I finally got out of my funk and went out for.... (sorry to admit this to the rest of you in snowed-in states)...

A RUN!!! 6 miles of pavement pounding made me feel good as new. Why didn't I just get up and run right away? If I knew I would tell ya....Trust me ;)

And what better post-workout snack....

Maple-Walnut Protein Cupcake

Cake: Combine and microwave for 1 min, 30 seconds
1.5 scoops vanilla protein powder (SunWarrior brand)
1 T egg whites
1t maple syrup
1 T crushed walnuts
stevia (1 serving)
pinch sea salt
pinch baking powder
h20 to moisten
Frosting:
1/4 cup fat-free Greek yogurt
1 t maple syrup
pinch stevia

So, what-da-ya think? Procrastination? Or a day of "productivity"? Doesn't working out and cooking count? ;)

  12. I am SO jealous of your run. I'm DYING to do a training run outside soon, but there's so much ice and snow on the ground!

Love that lunch idea, by the way. I always doctor up my soups but never do quite that good a job!

  16. I totally have days like this when I have so much planned I need to do, but instead I just lounge all day and do none of it! haha Someetimes those days are needed, as long as you get back out there the next day and do what you have to its ok!

  17. Um, my to do list very often magically morphs into a "how can I sit/lay/sleep/eat on the couch for as long as possible list". It happens. :)

I have the flu h=but have been oddly productive today. I try to balance my free times during the week between productive and relaxing, that way I don't feel overwhelmed when I have a lot to do because I know I might spend the next evening watching TV or reading blogs or doing something else fun.
