So much pot

Crock pot, kids. Last week I posted that crock pots (aka slow cookers) intimidate me. After some experimenting, I'm convinced they are actually the easiest way to pretend you're a fabulous cook.

Enter pot meal #1: Apple n' cinnamon flax oats

Ingredients 
3 cups oats
2 chopped apples
4 cups water
4 cups almond milk (or skim, soy, hemp, rice, etc.)
2 T flax seeds
1/2 tsp cinnamon
1/4 tsp nutmeg
stevia (equal to 6 servings)
sea salt (2 pinches)
Night before: Combine ingredients, set on low, and cook covered for 8 hours

Next morning!

*Next morning: Add more water/milk if it's too thick. I also added a half scoop of vanilla SunWarrior to my serving for some extra protein (and a tsp of peanut or almond butter) and it was ahhhh-mazing.

*To reheat a day a later: If the oats clump, whisk in some hot water and you're good to go!

Pot dish #2: Cajun chicken and veggies

Ingredients:
2 chicken breasts, diced
2 medium sweet potatoes, peeled and diced
1 yellow onion, chopped
2 garlic cloves, peeled and finely diced
4 cups veg broth
1 head broccoli, chopped 
2 cups green beans
1 cup carrot sticks (are they called sticks? The tiny ones?)
1 T flax seeds (*optional)
1 T EVOO
1/2 T Cajun spice 
1/2 t cumin
1 t basil
1/2 - 1 t sea salt
1/2 t black pepper

Combine and cook covered on low for 8 hours

Served with a side of spiced quinoa

Spiced Quinoa
2 cups quinoa
4 cups chicken broth
1 cup H20
1/4 t Cajun spice

Two fantastic meals. And so incredibly easy. No idea why I was so scared to use ma pot. Stuuupid. ;)

  1. I love my crockpot! Right now I'm obsessed with salsa chicken in the crockpot! Put 2-4 chicken breasts (can be frozen) in the crockpot with a large jar of salsa. Cook on low for 6-8 hours. Shred chicken and voila! Chicken for tacos, salads, pretty much anything!

  3. You've inspired me to open my crock pot and start using it! I'm not an oatmeal girl, but yours look DELICIOUS!

    My brother gave me a slow cooker cookbook for Christmas and I've bookmarked a number of recipes...Once I try them, I'll definitely share with you! xoxo

    I know it's easy and the food would be fabulous, but I look at it just think....wtf am I going to put in it?

    So the more I see recipes, the closer I get :)

  6. Oh my gosh what an awesome idea to make crock pot oats!! The biggest reason I don't eat oats for breakfast is because they take SO dang long to cook...but that eliminates that!! Might be the first recipe I make in my crock pot when I get it back to my apt...

  7. I like to turn the crock-pot on at night before bed, so I have something hot and steamy to pack for lunch in the morning. My old standby is stew...

  9. i had curried chicken and veggies last night! mmm cajun spice would have been so good!

    i use the crock pot occasionally although i should use it more often. mostly i make beef and veggie stews in it <3

  11. Yummmm! I sadly do not have a crockpot but I wish I did! The number of kitchen gadgets in my house has been increasing rapidly lately so I should probably slow down, but it's next on my list!

  14. Crock pots do all the work for you! A simple way to produce a meal.

  16. @Errign Yup :) My roomies usually have some so they don't last long but I'll add a splash of milk, stir, and throw em in the microwave
